Bavarian cream with three chocolates | Anna’s sweets
Creamy, fresh, yet delicate, perfect for any occasion… Bavarian cream with three chocolates is one of the most popular chocolate desserts you will never tire of eating. The three chocolates come together in a triumph of goodness that will make any palate fall in love!
Ingredients for 8 people:
370 g milk
370 g cream
140 g egg yolks
70 g sugar
pinch of salt
30 g gelatine
200 gr dark chocolate
250 gr milk chocolate
250 gr white chocolate
1200 gr cream
Procedure:
Start by preparing a custard with the first five ingredients, bring the milk and cream to the boil, add the egg yolks previously beaten with the sugar and salt; cook the custard on the stove until it reaches a temperature of 82 degrees. Add the hydrated gelatine to the hot cream. Chop the chocolates and pour about 300 g of the still hot custard over each chocolate, stir until completely melted. Finally, add the whipped cream, 400 g each, to the three compounds, stirring gently so as not to disassemble it too much. Layer the cake or single portions in the way you prefer, waiting at least 20 minutes in the freezer between each layer. Leave the cake a couple of hours in the fridge or half an hour in the freezer, then enjoy.
