The warm season has finally arrived, and a snack outdoors can be a great moment to be with family and friends. These muffins are a delicious and healthy idea to be enjoyed with fresh fruit or a glass of milk.
Ingredients for 20 muffins:
4 eggs
200 gr sugar
250 gr yogurt
100 gr sunflower seed oil
100 gr milk
400 gr flour
50 gr potato starch
1 small packet of yeast
Vanilla
Berries or chocolate chips
For the crumble:
100 gr butter
50 gr sugar
200 gr flour
A pinch of salt
Procedure:
The first step for making the crumbly muffins is the crumble which should rest in the fridge before cooking: combine the butter, sugar, flour, and salt in a bowl and mix with your hands until you obtain a sandy and homogeneous mixture, then store it in the fridge. For the muffin dough, whisk the eggs with the sugar, when they are foamy, add the yogurt, the oil and mix. Sift the powders into the mixture and mix them by pouring the milk slowly. Add to the dough either berries or chocolate chips. Place the muffin cups inside the special molds and fill them ¾ with the mixture, finally crumble on the surface of the muffins and bake at 180° for 30 minutes.
