September is the season of figs, a very versatile and easy-to-find fruit. It is excellent with savoury, accompanied by cheese and bruschetta, and, of course, also with dessert. If you want to prepare a dessert with figs, you are spoilt for choice: I propose a cake for breakfast, with a very simple dough that is moistened and sweetened by the presence of these fruits.
Ingredients:
– 3 eggs
– 150 g sugar
– 50 g melted butter
– 200 g Greek yoghurt
– 200 g flour
– 16 g yeast
– 8 large figs
– The peel of one lemon
Preparation:
Beat the eggs with the sugar until they become frothy, add the melted butter and then the yoghurt and lemon peel. Incorporate the sifted flour and baking powder. Now all that remains is to peel the figs and add them to the mixture in large chunks, pour the mixture into a buttered cake tin 24 cm in diameter, decorate the surface with sliced figs and dried fruit to taste, then bake in a static oven at 180 degrees for 40/45 minutes. Leave to cool before unmoulding, then transfer the yoghurt and fig cake onto a serving plate and serve.
