Roast courgettes stuffed with rice and minced meat | Let’s cook with Nonna Rosa

During these hot days, to make children and grandchildren happy, I prepare a classic recipe: stuffed round courgettes. They are tasty and light, easy to prepare and they take little time.  They can also be stuffed with meat, tuna or even simply with vegetables, and can be cooked in advance because they are tasty if eaten warm or cold. Let’s prepare together the version stuffed with minced meat and rice.
It serves 4:
  • 8 round courgettes
  • 350 grams of ground beef
  • 250 grams of rice
  • 1 carrot
  • 1 stalk of celery
  • 1 onion
  • 2 tablespoons of breadcrumbs
  • Grated Parmesan cheese
  • Extra virgin olive oil to taste
  • Salt to taste
  • Pepper to taste
Difficulty: easy Time: 60 minutes Preparation: Let’s start by preparing the round courgettes: cut the top and empty them inside using a spoon (leave a centimetre thick on the outside and keep the pulp). Now let’s take care of the filling, pour extra virgin olive oil into a pan, clean and cut the vegetables into cubes and fry them for a couple of minutes, then add the minced meat, a drop of water and cook for 10-15 minutes.  Meanwhile, boil the rice in salted water, as soon as it is cooked, pour it into a bowl together with the minced meat, season with salt and pepper and mix everything together.  Fill the courgettes with the filling, complete with a sprinkling of breadcrumbs and Parmesan cheese, then bake at 180 degrees for about half an hour and finally serve the stuffed courgettes hot, lukewarm or even cold.
